Instructions
Preheat oven to 350 F.
Put paper liners in muffin pan.
In a medium bowl, whisk flour, sugar, baking powder, baking soda, cinnamon, and salt together.
In a large bowl, combine applesauce, vanilla, and carrot.
Add dry mixture to wet mixture in 3 to 4 batches, stirring until just combined.
Fill muffin cups ¾ full and bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
Remove cupcakes from oven and transfer to a wire cooling rack.
Once completely cool, add icing OR frosting and garnish with chopped walnuts or shredded carrot.
