| Instructions |
| Preheat oven to 350 F. |
| Put paper liners in muffin pan. |
| In a medium bowl, whisk flour, sugar, baking powder, baking soda, cinnamon, and salt together. |
| In a large bowl, combine applesauce, vanilla, and carrot. |
| Add dry mixture to wet mixture in 3 to 4 batches, stirring until just combined. |
| Fill muffin cups ¾ full and bake for 25 minutes, or until a toothpick inserted into the center comes out clean. |
| Remove cupcakes from oven and transfer to a wire cooling rack. |
| Once completely cool, add
icing OR
frosting
and garnish with chopped walnuts or shredded carrot. |
