| Add carob powder and cornstarch to a small bowl and mix until well combined. |
| Add pure maple syrup, stirring to combine, until you have a nice smooth consistency. Set aside. |
| Split each date in half and remove the pit. |
| Replace the pit with a pecan half and squish the date back together. |
| Place each date into the bowl and coat well with the carob coating. |
| Place coated dates onto a plate or container and put in fridge for at least 20 minutes to cool (the carob coating will harden a bit after being cooled). |
